Happy WIAW fellow foodies!
I’m a bit late but I just got back from work… I’m exhausted! AND HUNGRY haha!! I’m eating a massive cookie-dough pudding with macadamia nuts, carob and chocolate drops (kinda like my dessert yesterday)… Delicious! I just need energy & comfort food… sounds familiar? ;) I bet y’all know what I’m talking ’bout!
Unfortunately my phone doesn’t make the best pictures at nighttime.. and I couldn’t make a photo of my meals at work either, so instead: I’m showing you my day of yesterday’s eats > my day free from work :)

Breakfast Dilemma: Having Candida issues… however I love (!) Fruit, especially in the morning. Solution = Eat a pound of summer fruit in the morning to satisfy my fruity needs and letting it fully digest before eating another meal. Seems to work rather well for me personally! I have less cravings for fruit & sugar later in the day 😄:)
If I don’t have enough time in the morning I skip this “pre-breakfast” and have porridge instead … no raisins >the best part!< (Candida you suck!) But sweetened with stevia or xylitol and I add chopped nuts and/or chestnuts.👌It’s delicious like that as well :)
Leftover shrimp stir-fry ♥ Shrimp marinated with Indian spices & sauteed with veggies in lots of coconut oil. Need I say more?!… ;)
A side salad and a savory quinoa porridge was next on my menu :) I love porridge, however I can’t do oats (oatmeal) so I opt for quinoa or millet instead. I actually love the taste of those flaky grains! I like a savory porridge more than a bowl of cooked grains, so often times I make a large pot with multiple servings of porridge that I can use both sweetened and savory. Major time-safer AND makes it easy to have a healthy snack/meal ready at all times :)
I’ve got a few lovers in my life.. one of them is called avocado and another favorite of mine listens to the name carrot.
Avocado & Carrot go together like a horse and carriage! Match made in culinary heaven (that’s where I met both of them to be precise ♥)! Since both veggies (yes, avocado is a fruit… I know ;) ) can be used in savory AND sweet dishes.. the possibilities when combining these two ingredients are endless! I’ve got a great sweet smoothie recipe, avocado-carrot cake, cookies.. you name it! Yup I think I’m obsessed and I’m not afraid to admit it :D :D :D
FYI: I ate this bowl of soup with a couple of slices of toast & salted butter ♥ *nomnomnom* :D
This is heaven in a ramekin. I know I use the term heaven a lot… but it’s true! A pudding made with baked sweet potato, coconut milk, coconut oil, coconut flour, stevia, cinnamon, ginger, nutmeg, maca powder, vanilla extract, vanilla protein powder, spicy red pepper, raw cacao nibs & macadamia nuts… I think it’s legit to say heaven right? ;)
OK, it’s late and I need to get my 8 hours of sleep in tonight >> I just made a pact with Madison << and I just really… really… am lacking in sleep = not good!
