WIAW – from Duck to Pumpkin to Chocolate to French Fries with Basil Mayo – I love food!

Happy WIAW my favorite fellow foodies! ;) :D How have you been?

Has anything new and exciting happened with you? Any fun food-discoveries? ;) My main food discovery this week has been a returned love for duck.. I feel a little guilty eating duck, but if I’m gonna eat misses cow, I might as well eat mister duck too!

I’ve eaten it only twice before in my life: the first time a few years ago I ate confit de canard a famously fatty classic (south-west) French dish. DELICIOSO! Fried potatoes, fresh green salad and duck confit… I thought I magically got zapped to a little bistro near Paris.

The second time I ate duck was a more Asian version of duck: marinated duck breast in a spicy soy sauce, crispy baked skin with a side of stir-fried veggies galore.  Totally different experience but equally as tasty!

I feel like duck is easier to digest than pork or beef for some reason… it might just be my imagination but eating duck feels lighter on my system than beef or pork does. For that reason I don’t eat pork — makes me bloated like you wouldn’t believe! So as an alternative, I think I’m gonna enjoy duck more often! Not too often though… ’cause I still feel a little guilty *blushing* *it’s the vegan in me speaking* :) :)

So what’s been going on with me personally?

Mainly studying for my upcoming entrance examination: you may or may not know I’ve finally chosen ME and I’m chasing my dream of becoming a fitness instructor :) I miss giving dance classes & motivating people to move! I love being a nutritionist, but I’d like to bring the whole package, so…. if all goes well on the 29th of August I can start college again to help me reach my dream goal! ♣ I’m stocked and I’m sure gonna keep you updated on everything I learn :D 

Also… it’s time to go back to school & work right? So I figured I’d write about lunch prepping!

FINALLY…. my food journal of lovely eats from yesterday!

Pumpkin I Love Thee... Roasted Pumpkin with Chocolate Sauce for Breakfast... I Say YES

Not your typical breakfast, but it’s a great easy to digest – pre workout – meal to get in before you go to the gym! I seem to run really well on either fruit or pumpkin in the gym… This morning I had leftover roasted (in butter) organic pumpkin with a sauce made from extra virgin coconut oil, cacao powder, carob powder and coconut sugar … My oh my: don’t knock it ’til you’ve tried it! :D

Marinated Turkey Steak as a perfect Post Workout Meal

Post WO a.k.a. Lunch was marinaded turkey steak with roasted carrots & a tall glass of beetroot juice.

I prept a huge (600 grams) juicy turkey steak, marinated in curcuma, paprika, garlic, ginger, salt, cayenne, cinnamon, cumin & fenugreek. It’s a big enough portion to last me 3 days easily :)😉Mealprep is where it’s at! ;)

I’ve picked up some new fun spices at the market, like: nigella, fennel seeds & horseradish powder. Do you like cooking with spices? If so… What’s your fave?

  Dutch Shrimp Croquettes with Horseradish DressingFrench Fries with Basil MayoCrispy Duck Breast Salad

Me & my mum went out for dinner and it was amazingly tasty! She had Dutch shrimp croquettes with a large salad in horseradish dressing. I had crispy pan-fried duck with a large salad in basil oil dressing. The fries came with basil mayonnaise: what a few basil leaves can do to make a random mayo into a flavorful superstar is admirable :o ;)

Avocado's

Dessert was another ACC (avocado-coconut milk-chocolate mousse) yumbowl, like I’ve featured on WIAW-posts before and I have the recipe on my blog! This time I added another C to the mix by sweetening with coconut sugar — heaven!

Side note: I’ve been adding coconut sugar to my diet – not the best thing to do when battling with a Candida overgrowth and it definitely gives me gas & cramps… but it’s soooooo good! I’m finishing this container and then I’m not gonna buy it for a while, until my Candida clears up again *deal**promise*!

I’m off to the gym with my mommy: we’ve been spending a lot of time together these past few days since it was the 4th year anniversary of my dad’s death-day on the 17th of August. Today is the 4th year anniversary of this cremation-day… :( Sad and emotional days for the both of us, but we’re talking a lot to each other about him and everything that has happened which helps us both ♥ Life is both hard and precious… ♥
