What I Ate When – WIAW – Coffee & School

Time for another WIAW FOOD PARTY! It seems like the craziness around here never stops.. one day I’ll catch y’all up (uhm.. is that proper English grammar?) I think I mean that one day I’ll catch up with you guys?! *Brainfog*… just woke up… don’t mind me getting ready for my internship at the local gym (I’m still a little nervous with ALL I have to learn..) OKAY Lianne.. stop talking.. start showing FOOD :D

(“What I Ate When” should become a bloggers game.. I feel it’s gonna be a hit since I don’t think many of us are actually taking Wednesday as our example WIAW mealday… right?! ;) )

Butternut Squash

Roasted Butternut for lunch >> Do you like Butternut? I kinda don’t to be honest… I do eat them whenever I can’t get Hokido pumpkin around here, but I just don’t like their flavor… I do think they’re perfect for soup though!

However yesterday was a Butternut day, so I roasted these with garlic oil and served them with a scrambled egg & mackerel mayo based paté >> Kinda odd you’d think, but this was definitely a #strangebutgood combination! (I should share with Laura.. & not to self: I should make finished product pictures BEFORE eating the stuff…*oops*)

Pumpkin seeds

Who roasts their own pumpkin seeds? I mean really… from the pumpkin… roasting and cutting the skins to find the green treasures?

I sure don’t! It’s too much work for too little profit in my opinion, howeverrrr I hate wasting the seeds! I know some foodies eat the skins too… but that just seems kinda wrong ;) Can you actually eat the skins? I mean.. not only from a nutritional standpoint (’cause I know one could do so) but from a culinary standpoint ;) Do the skins taste good too?

Today I just roasted a bunch of raw pepitas for topping on… well pretty much anything & everything! I eat at least 1/2 cup a day. Love ‘m!!

Vanilla Extract in the making

 

Uhm… this is not what you think it is! It’s not what it looks like… I swear! I’m not turning into an alcoholic :o … I just have a huge love for vanilla extract ;) ♥

I’ve been making my own for 3 years now and I’d never go back! It’s the easiest and most rewarding thing to do! Just buy a cheep Vodka (or flavorless high alcoholic beverage – like the Organic Jenever I’ve got here > made from the juniper berry < do you have this in the States or elsewhere? I’m not sure if it’s typical Dutch/Belgium or not… could very well be ;) )

Take your liter of Vodka and place about half a pound of vanilla pods in the bottle (up to a pound if you like it extremely potent!). Shake it all around, and place in the dark (kitchen cabinet will do!) for at least 6 months. Shaking regularly; like every other day or so.. Vanilla Extract ready to use! DELICIOUS! Especially in hot chocolate… maybe I will turn into an alcoholic after all :o ;)

I think I’m gonna make these again this weekend! I’ve missed these fluffy protein bars! They’re absolutely heavenly if I may say so myself. A recipe created out of a necessity for bars with not too many ingredients in the house.. et voila… success! ♥ Please check them out if you have a chance, I bet you’d like ‘m ;-)

Discipline - what you want most

Side note: I was just cleaning my laptop as I found this quote in my image file… It hasn’t lost it’s magic yet! Great reminder to keep me motivated to keep my priorities straight. There is SO MUCH in life I want to do and accomplish, yet we all need to make decisions on what we want MOST.

Currently my study to become a personal trainer gets most of my attention as well as my personal practice as a (sports)nutritionist and lifestyle coach. I love what I do so I purposely choose to be single for a while and I don’t date. Period. I’m focusing my attention on my passion for food & fitness as well as my precious friends & mummy. I feel happy the way I live my life and yesterday when someone asked me “don’t you miss having a boyfriend?” & “don’t you miss not going out every Friday night?” >> Well quite frankly no! << I love to be social and I love going out… but what I want MOST is to pursue my dreams… and that’s exactly what I’m doing :)
